Simple Lunch Recipes

It’s time to get wrapped up in another By the Bite! If you’ve been following along, you know we’ve created quick and easy breakfast recipes and delicious 30-minute dinners. Now it’s time to explore the midday meal–lunch!
Did you know that poor eating habits can contribute to fatigue?
We’re excited to get back in the kitchen to share our simple lunch recipes. If you have a sweet tooth, finish your lunch with one of our five-ingredient desserts which are not only tasty, but easy to make.
Healthy Hummus Wrap (serves 1)
You’ll need:
- 1 tortilla of your choice
- 2 tbsp. of hummus (any kind)
- ½ cup of shredded lettuce
- ¼ cup of chopped red onion
- ¼ cup of chopped cucumber
- ¼ cup of shredded carrots
- Balsamic vinaigrette (to taste)
To make:
- Lay the tortilla flat and spread hummus evenly.
- Layer lettuce, red onion, cucumber, and carrots on top in any order.
- Drizzle with balsamic vinaigrette.
- Roll it up and enjoy!
“Lettuce” Eat a Turkey Wrap (serves 1)
You’ll need:
- 1 tortilla of your choice
- 1 tsp. mayonnaise (feel free to substitute with another condiment, like mustard)
- ½ cup of romaine
- 5 slices of deli turkey
- ½ cup of grape tomatoes, halved
- ¼ cup of shredded cheese
- 1 tbsp. of precooked bacon crumbles (store-bought or homemade)
To make:
- Lay the tortilla flat.
- Spread mayonnaise or other condiment evenly.
- Add romaine as desired.
- Layer turkey, grape tomatoes, cheese, and bacon in any order.
- Roll it up and enjoy!
Cool Cucumber Salad (serves 1)
You’ll need:
- 1 large cucumber, halved and sliced
- 1 ½ cups of grape tomatoes (halved, if you prefer)
- ¼ cup of chopped red onion
- ½ cup of crumbled feta cheese
- 1 tsp. of finely chopped oregano
- Balsamic vinegar (to taste)
To make:
- Add the sliced cucumber to a large bowl.
- Mix in the tomatoes, chopped red onion, feta, and oregano.
- Toss with balsamic vinegar and enjoy!
